Beer mac n cheese

Mac and Cheese is one of the greatest things to have ever been created in a kitchen. It is up there with most people’s top comfort food, this one is no exception, when I made this I used spirali and I had it for lunch for the next two days! You can easily feed 4 very hungry people from this and still have some left over.

  • 200g Spirali
  • 500ml Milk
  • 200ml Pale Ale
  • 100g Grated Cheddar
  • 200g Grated Mozzarella
  • 2 Rashers Bacon (cut into small dice)

In a large pan, bring the milk and beer to a simmer.  Add the pasta and cook until the pasta is tender and covered in the cooking liquid, it will reduce a lot so don’t be alarmed, just make sure it doesn’t boil away and burn!

Once the liquid is virtually gone and the pasta is cooked add the cheddar and mozzarella and give it all a good stir around. Transfer to a baking dish and bake at 180c for about 10 minutes to brown the top.

Whilst in the oven chop up the bacon and in a small frying pan, cook until golden and crispy.  Remove the pasta from the oven, add the bacon and grab a fork!
