Continuing the leftover theme from yesterday, today we have a fabulous beef on ciabatta. This is a re-working of a dish I used to make at university sometimes however, that one was with Yorkshire puddings. This uses up the goodness that is leftover gravy!
- 1 Ribeye Steak
- 1 Ciabatta Roll (cut in half)
- 3-4 tbsp Leftover Gravy
- ½ Red Onion (thinly sliced)
- Handful salad leaves
Fairly simple really, cook the steak to your liking, for ribeye I tend to go on the side of medium rare to give the fat a chance to render down. Once the steak is done, leave it to rest, in the pan you cooked the steak in, fry the cut side of ciabatta roll in a little oil until crispy.
Zap the leftover gravy in the microwave and then plate up. Ciabatta first, then the beef, smother in the gravy and then thinly slice onion and the salad leaves.
