I was out for a wander a few weeks ago listening to an old podcast from BBC Radio 4’s The Food Programme, the title, Raising the Pulse. I’ve never really been one for pulses, beans and lentils, aside from the ubiquitous Baked Bean. As a result of listening to the programme, I headed to the nearest supermarket and got myself a bag of Green Lentils to play with.

  • 100g Green Lentils
  • 50g Bacon Lardons
  • 25g Red Pepper
  • 50g Courgette
  • Handful of Rocket
  • 1 Shallot

 This one is simple enough to be honest. Cook the lentils for about 25 minutes until they’re just softening and leave to one side. Finely dice the courgette, red peppers and shallot then, in a frying pan brown off the bacon lardons. Next add the diced vegetables and give it a good stir, before serving wilt the rocket through the lentil mix and enjoy.
