Messing around in the kitchen is one of my favourite things to do, but after a good while making things for future lunches and dinners, I felt I needed to make something quick and easy. This definitely is that. Noodles are my go to comfort food and also favourite when it comes to fast and tasty food. When I was a student, stir fried noodles and soy sauce were a lunch and dinnertime staple!
That nostalgic love for simple noodles has stuck with me and as you can see from this dish, I’ve only added 2 more ingredients to make a more rounded meal, in other words one that has some green stuff in it!
- 1 nest of noodles (whatever your favourite may be)
- 25ml Kikkoman Soy Sauce
- 100g Samphire
- 200g Soy Mince
This was a little bit of an experiment for me having never really made anything with soy mince but here’s to trying to be at least slightly healthy! Start off by re-hydrating your noodles. Then, in wok with a little oil stir fry the soy mince and samphire. This shouldn’t take very long at all, once the noodles are ready, put them into the wok and add the soy sauce, making sure the noodles get a good coating. Then you’re ready to grab a bowl and some chopsticks and dive in! Simple, fast and maybe slightly healthy?
