Portly Cooks | Mushroom Noodles

If you are looking for a quick and easy dinner for those busy weeknights then look no further!

  • 200g Mushrooms
  • Handful Spinach
  • 2x Spring onion
  • 1 Nest Egg Noodles
  • 1 tbsp Soy Sauce
  • 1 tbsp Oyster Sauce
  • 1 tbsp Mirin
  • 1 tbsp Golden syrup

Multiply by the number of people you are feeding if more than one.

Start off with the mushrooms and spring onions, slice them thinly and get them cooking a frying pan with a little oil. While the mushrooms cook, rehydrate the noodles, drain and leave to one side.  Mix together the soy sauce, oyster sauce, mirin and golden syrup (a tsp of sugar works here if you don’t have golden syrup), add to the pan with the mushrooms followed by the noodles and the spinach, as the sauce reduces it will wilt the spinach. Once done, transfer to a bowl and dig in!
