Portly Cooks | Roasted Aubergine

Need a quick and easy dinner? Look no further!

Serves 2

  • 2 Aubergines
  • 1 tbsp Oil
  • 4 tsp Harissa Paste
  • 4 tsp Yoghurt

It’s ridiculous how easy this is. Heat the oven to 180c and rub the aubergines in the oil. Put them on a baking tray and bake in the oven for 40 minutes, turning half way through. Once they’re done cut them in half and put the harissa and yoghurt on them… that’s it.
