Portly Cooks | Lemon Curd Cheesecake

It’s lemony, it’s creamy, it’s got a buttery biscuit base, it’s dead easy… enough of sounding like a Masterchef judge, here’s a dead easy cheesecake.

Serves 2 (If you feel like sharing)

  • 8 Digestive Biscuits
  • 50g Butter
  • 2 tbsp Lemon Curd
  • Zest of a Lemon (Put the juice in your gin)
  • 100ml Double Cream
  • 150g Cream Cheese
  • 2 tbsp Icing Sugar

Crush the biscuits and melt the butter. Add the melted butter to the biscuits and mix. Put the biscuit mixture into the bottom of a small spring form pan and flatten with the back of a spoon.

Add the cream and icing sugar to the bowl and whisk until the cream thickens. Add the rest of the ingredients and whisk again making sure to get plenty of air into the mixture.  Pour the mixture onto the biscuit base and refrigerate until set.
