These things really are awesome and if you can resist eating them all in one sitting they are great with breakfast the next morning or as a snack to take with you to work.
- 1kg New/Salad Potatoes
- 2 tbsp Oil
- 1 tsp Dried Thyme
- Salt and Pepper
It’s really really simple, boil the potatoes until soft. Put them on a baking tray and crush with a potato masher or the bottom of a glass, what ever you fancy. Brush the potatoes with the oil and sprinkle over the thyme before seasoning liberally with the salt and pepper. Cook in 180c oven for 20-25 minutes until golden and crispy.
