Portly Cooks | Breakfast Hash

They say that breakfast is the most important meal of the day, I have to be honest I rarely eat it, feeling that an extra half an hour in bed is better than making toast at 5:30. That being said though at the weekends when we all have a little extra time it is nice to indulge in a leisurely breakfast and this one is super easy!

  • 2 Rashers Back Bacon
  • 4 or 5 cooked potatoes (use leftover roast potatoes if you have them)
  • 2 Salad Tomatoes
  • 3 Spring onions
  • 1 clove Garlic
  • One egg person

Cut the bacon into lardons and fry in a large heavy bottomed pan. While the bacon cooks, chop the rest of the ingredients and add them to the pan. Give it all a stir and cook for about 4 minutes on a medium heat. 

Finally, make little wells in the ingredients for you eggs and crack them in. cook until the egg is completely done. Use a id if you want the tops of the eggs done a little more.
