Portly Cooks | Roast Chicken Thighs, Mixed Beans and Tenderstem

This one came out of rummaging around in the cupboards for something different to do with chicken… which can feel like trying to reinvent the wheel sometimes, so here it is, my new well… for this week at least.

  • 3 Chicken Thighs
  • 400g Can of Bean Salad (in water)
  • 1 Chicken Oxo
  • Half tsp Garlic Granules
  • Tenderstem

Drain the beans and wash. Put beans in a roasting dish, crumble over the oxo and add the garlic. Stir and season. Top with the chicken and roast in the oven at 200c for 30-35 mins. Cook the tenderstem and serve.
