Portly Cooks | Beef ‘Burrito’ Rice Bowl

This one is for when you can’t be bothered and have been looking for a way to use up that old taco seasoning pack when you do have any tortilla to make tacos.

  • 150g Beef Mince
  • 1/3 cup rice
  • 1 cup water
  • 1 Chicken Oxo Cube
  • 1 Beef Oxo Cube
  • 2 tsp Taco Seasoning/Fajita Seasoning
  • 1/2 Red Bell Pepper (diced)
  • Grated Cheese to top

Cook the rice first for this one.  Wash the rice and along with the chicken oxo, taco seasoning and water bring to the boil and simmer on a low heat for about 10 minutes. Once done, cover and leave to one side.  in a frying pan, brown the mince and add the beef oxo, make sure the meat is well coated. Cook the peppers and then add the rice to the pan. Give it all a good stir and put in a bowl and top with the cheese.
