Oooo Lamb Shank, this is up there in the top 3 of answers to the question, ‘What would your final meal be?’ It’s an indulgent meal perfect for a Sunday roast or a fancy mid-week treat, all this one needs is time, and you get that awesome smell of dinner wafting through the house when you come home from work or walking the dog too!
- Lamb Shank (1 per person)
- New Potatoes
- Green Vegetables of your preference (I used asparagus and tenderstem)
- 2 Lamb Stock Cubes
- 1 tbsp Lamb Gravy Granules
- 1 tsp Dried Mint
- Boiling Water
You’re going to need your slow cooker for this one. Season the lamb shanks and place in the slow cooker, cook on high for 3 hours and then turn down and leave for as long as you like. If you are going to work, start it on low and just let it do its thing, it’ll be ready by the time you get home.
To go with the shanks, roast the new potatoes whole in a drizzle of oil, and steam the veg until just tender. For the gravy, drain the slow cooker of juices and skim the liquid of fat. Add the lamb juices to some boiling water, add the stock cubes and dried mint, simmer for 2 minutes and thicken with the lamb gravy granules.
