Paella is one of the classics and this version of mine is super simple, I guess it’s not really a paella but it has the same flavours.

  • 1 cup Rice
  • Pinch of Saffron (if you don’t have it don’t worry)
  • 1 Chicken Oxo Cube
  • 1 cup White Wine
  • 1 tsp Tomato Puree / 1 tbsp Pasta Sauce (from a jar, you know the stuff)
  • 1 thumb sized piece of Chorizo
  • 150g Fish Pie Mix
  • 6 King Prawns

Start off by washing the rice and then add 1 cup of water, the white wine, oxo cube and saffron (if using) to it. Bring the rice to the boil and then turn down and simmer for 8 minutes, once done cover and leave to one side.

Chop the chorizo into small dice and then fry in olive oil on a low heat so the chorizo flavours the oil.  Add the fish, tomato puree and prawns to the pan and cook until the prawns turn pink.  Finally add the rice and stir well. Now stick it on a plate and enjoy!
