Scotch eggs are a wonderful thing, they’re a great thing to make at home and even better paired with a cold crisp beer.
- 5 eggs (one beaten for coating the other eggs)
- 4 sausages
- 1-2 cups Breadcrumbs
- 2 tbsp Flour
First off boil the kettle. Pour the boiled water into a sauce pan on a high heat, you want a rolling boil. Carefully place the eggs in the water and cook for 6 and a half minutes. Once done transfer them to a bowl of cold water, add ice if you have any.
Once the eggs are cold, peel them under water, it will help you get the shell off without ruining the egg too much. Once peeled it’s time to construct the scotch eggs, take the skins off the sausages, snap one in half and place between 2 pieces of cling film.
Squish the sausage down so that it forms a thin sheet of sausage meat. Remove the top layer of cling film and put an egg in the middle. Use the other piece of cling film to help you wrap the sausage meat around the egg.
Once you have done that, roll the sausage meat covered egg in flour, then the beaten egg and finally the breadcrumbs. Repeat this for all the eggs.
For cooking the eggs you have a choice here. You can deep fry them for 4 minutes and then bake them for 3 minutes at 180c or you can bake them at 180c for 7 minutes, the choice is yours.
