Pan Seared Cod

Fish is fast and healthy; this one takes all of 20 minutes to make, so if you feel you don’t have time to cook, now you do!

  • 150g Cod Lion
  • 50G Tenderstem Broccoli
  • 50g Samphire
  • 50g Wild Mushrooms
  • Knob of butter

Pat the cod dry on some kitchen towel, season and pre-heat the oven to 200c. Heat a little oil in a fry pan and cook the fish skin side down for about 3 minutes until the skin is crispy. Transfer the fish to a baking tray and finish in the oven, topping with the knob of butter.  While the fish is in the oven boil the kettle and zap the broccoli and samphire in the microwave for 2 minutes. Fry the mushrooms in the pan used for the cod. Once its all cooked, bring it all together and grab a knife and fork!
