I’m always looking for something to do with those little baby carrots and also more things to do with black pudding than just shoving it on my Sunday breakfast, this one ticks those boxes.

  • ½ Pack Baby Carrots
  • 3 Slices Black Pudding
  • ½ Red Onion

Heat the oven to 200c. Put the carrots into a roasting pan and drizzle with some oil. Roast the carrots for around 15 minutes.  While the carrots roast, chop the black pudding and slice the onion.  In a large pan fry the onions and black pudding. Once everything is done, put it on a plate and sprinkle over some chopped parsley or rocket to make it look pretty.
