Cornflake Bufflao Chicken Thigh

Sometimes you just need a bit of spice in your meals. This buffalo baked chicken does the trick.

  • 2 Boneless Skinless Chicken Thighs
  • 1 cup of Corn flakes
  • 1 egg
  • 1 tsp Paprika
  • 1 tsp Chicken Seasoning (Tesco)
  • 2 Brioche Buns
  • Franks Red Hot Sauce

Start off by sticking the Cornflakes, paprika and chicken seasoning in a blender and giving it a whizz.  Once blended, put the corn flake crumbs in a bowl. Next, whisk the egg and dunk the chicken thigh into the egg followed by the corn flakes, do the same for the second.

Bake the coated chicken in the oven at 200c for 15-20 minutes. Once the chicken is cooked, transfer to the buns and glug some Franks Red Hot over the top.
