This one is a top dish for using up leftover rice (if you happen to have any). It’s a super popular dish in Japan and fairly simple too!
- 1/3 Cup Rice (Cooked and Cold)
- You could use the microwave packet stuff here too
- 50g Stir Fry Mix (You know, the one in the supermarket)
- 10ml Soy Sauce
- 10ml Mirin
- 2 Large Eggs
- Ketchup/Sriracha
Start off by stir frying the rice with the vegetables. Once nearly done, add the soy and mirin and mix well to make sure the rice is nicely coated. Leave to one side and in another pan make a 2 egg omelette. Cook on either side, add the rice to one side and fold the omelette over. Top with either ketchup or sriracha. I went for sriracha.
