If you’re low on time to make something tasty this is a super cheat Red Curry, on the table in the time it takes to cook some rice.
- 4 King Prawns (3 peeled and De-veined, 1 Whole)
- 100g Monkfish, chopped into chunks
- 175ml Coconut Milk
- 1 Red Curry Paste Tub (I used Blue Dragon)
- 1/3 Cup Rice
Wash the rice and then bring to the boil in 2/3 cups of water. Once boiling turn the rice down to a simmer and cook for 9 minutes. While the rice cooks, in a sauce pan bring the coconut milk to a simmer and add the curry paste, give it a good mix and leave to one side. Next, cook the seafood in a little oil in a very hot pan. Once cooked (About 3 minutes), leave to rest.
Now’s the time to plate up, put the fish in a bowl. Bring the coconut milk back to a boil and pour over the fish, top the bowl with the one whole prawn. Fluff the rice and put into a serving bowl. Done! Red Curry in the time it takes to cook rice!
