This rice bowl is perfect for using up leftovers or like this one making it from scratch.
- 1/3 Cup of Sushi Rice
- 2 tbsp Mirin
- Karaage (Japanese Style Fried Chicken)
- 1 Carrot
- 1 tbsp Edamame Beans
This dish is more about construction. Wash the rice thoroughly and then cook in double the amount of water to rice, so for this… 2/3 cups of water to the 1/3 cup of rice. Bring to the boil and then simmer for 10 minutes, until the water has evaporated. Stir in the mirin, cover and leave to one side. Next, fry the chicken following the instructions in the link. Once done, keep warm in the oven.
Finally it’s time for construction of your bowl. Using a speed peeler shave off some of the carrot. Put the rice on one side of the bowl. On the other side, add the chicken and carrot shavings. Top the bowl with the edamame beans and sprinkle over some sesame seeds.
