Chorizo and Eggs

Brunch is probably one of the best meals ever, so when you’ve some time at the weekend or otherwise (you lucky people) try this one to munch whilst reading the paper sipping an espresso.

  • ½ Bell Pepper
  • Thumb sized piece of Chorizo
  • 2 Eggs
  • Handful of Rocket
  • Bread for toast

Thinly slice the pepper and then chop the chorizo into small dice shaped pieces.  In a large pan fry the chorizo gently so that the oils come out, add the peppers and cook until soft. While they cook, in another pan scramble the eggs and then toast the bread. All that’s left is to assemble your brunch, slice the bread in half (triangles not rectangles…) top with the egg followed by the chorizo and peppers and a bit of rocket.
