Now then this one is a classic Italian dish and the measurements? Well there aren’t any measurements really, it’s a case of chuck it in and if it looks about right then it is. Aglio. Olio e Peperoncino is a super simple dish taking roughly as long as the pasta takes to cook, I have however, upgraded it a bit with the addition of the squid, but you can leave that off for a mega fast tasty dinner!
- 75g Spaghetti
- A good glug of good Olive Oil
- 1 clove crushed garlic, 2+ if you like your garlic!
- 1 red chilli finely diced
- Squid, dressed and cut into rings (Optional)
Cook the pasta in salted boiling water for 8 minutes. About a minute before the pasta is done, heat the oil in a large pan and add the garlic and chilli. Drain the pasta and chuck it in the pan with the oil. Fry it for about a minute making sure it’s all thoroughly coated. Serve!
If you add the squid, heat the oil a couple of minutes earlier, stir fry the squid and remove once done (about a minute on a high heat). Repeat the above and then top your pasta with the squid.
