Portly Cooks | Bruschetta


So simple it’s hardly worth putting these on here, but here we go.

  • Half a Baguette
  • 2 Salad Tomatoes
  • 1 Clove Garlic (Crushed)
  • Olive Oil
  • Salt and Pepper
  • Balsamic Syrup (Optional)

Cut the baguette into slices and drizzle liberally with the olive oil. Bake in the oven for about 10 minutes at 200c or until crispy. Turn the oven off and leave the bread in there until you need it. Finely chop the tomato and mix with the garlic. Season the mix well and leave in the fridge until you’re ready to serve. Just before serving top the bread slices with the tomato mixture and drizzle over the balsamic syrup (if using).
