Here is another way to use your ice cube tray…
- 1/3 Cup Sushi Rice
- 2/3 Cups Water
- Fish of your choice (I used; Scallop, Yellow Fin Tuna and Salmon)
- 4 caps full Mirin
This one is all about the rice, you need to wash it. Wash it thoroughly, like 3 or 4 times, until the water is clear. Drain and then add the 2/3 cups of water. Bring the water to the boil and then simmer on a low heat for 10 minutes. Once cooked give it a stir, add the mirin, stir again and leave covered for about 5 minutes.
While the rice and mirin do their thing, line your ice cube tray with cling film. Portion the rice into the ice cube sections and then cover, and leave in the fridge to firm up. Once the rice has cooled, thinly slice your fish and lay it on top of the rice. Finally, dunk it in some soy sauce and stick it in your face!
