I went to a restaurant in Oxford and the marinade on the lamb I had was to die for! So this is my attempt at the marinade and subbing out the lamb for chicken.
- 2 Chicken Thighs
- 2 tbsp Worcestershire Sauce
- 2 tsp Lemon Juice
- 1 tbsp Olive Oil
- 1 tsp Chopped Garlic
- ½ tsp Mixed Herbs
In a bowl mix together the marinade ingredients and leave to one side. Next, de-bone the chicken thighs with a pair of scissors. Once de-boned add the chicken flesh side down to the marinade and leave in the fridge for at least half an hour.
Once the chicken has marinated, place the thighs skin side down in a cold dry pan. Turn the heat onto full and then cook the chicken for around 8 minutes, 5 on one side 3 on the other. Serve with some tenderstem and enjoy.
