Piri Piri Mackerel

Mackerel can withstand some serious flavours being thrown at it as it’s quite a strong flavoured fish itself.  So this one has Piri-Piri sloshed all over it. Speak to you fishmonger about butterflying the fish for you, although you can do this with regular fillets.

  • 1 Mackerel (Butterflied)
  • 1 tsp Piri-Piri Seasoning
  • 1 tsp Oil
  • 1 Packet Microwave Quinoa
  • 50g Supersnap Peas

Start with the fish, heat the oven to 180c. Then, in a small cold frying pan drizzle a little oil and add the fish skin side down.  Turn the heat to max and cook the fish until you see the colour change at the side of the fillets.

Once this happens, transfer the fish to a baking tray. Mix together the piri-piri seasoning with the oil and brush onto the flesh side of the fish. Bake in the oven for 5-10 minutes. Boil the kettle.

While the fish is in the oven zap the quinoa and in a bowl of hot water the sugarsnap peas, in the microwave for 2 minutes. When it’s all done, plate up and enjoy.
