I’m always looking for new things to do with scallops. I saw this on a menu a few weeks ago and thought, ‘I can do that!’
- 1 Large Scallop
- 200g Haggis
- 1 Scallop Shell
- 1 Spring Onion
Thinly slice the spring onion and then fry along with the haggis. While the haggis and onion cooks, pat the scallop dry on either side. Remove the haggis from the pan and put into the scallop shell ready for serving. In the same pan the haggis cooked in, sear the scallop on either side for around 2 minutes. Once done, put the scallop on top of the haggis and enjoy.
