Sometimes a noodle soup is the only thing that will satisfy your hunger. Here is a super simple one for your dinner.
- 3 Thin slices of Pork Belly (Optional)
- 1 Nest Noodles
- 100g Tenderstem
- For the soup…
- 1 tbsp Fish Sauce
- 1 tbsp Soy Sauce
- 1 tbsp Oyster Sauce
- 2 Stock Cubes (I used chicken)
- 1 Star Anise
- ½ tsp Dried Coriander
- ½ tsp Garlic Powder
- ½ tsp Powder
- 500ml Water
Start off by boiling the kettle; you’re going to need a fair bot of water for this one. Once the kettle is boiled, put the noodles in a bowl and cover with water and zap them in the microwave for 3 minutes. Mix all of the soup ingredients together in a saucepan and simmer for 5 minutes, storring occasionally. Zap the tenderstem in the microwave in some boiling water for 2 minutes. If you’re using the pork pan fry the pork slices for about 3 minutes either side. Once ready, put the noodles in a soup bowl, followed by the tenderstem. Cover with the soup and top with the pork belly.
