Mackerel is a favourite of mine, it’s dead easy, cheap and full of flavour.
- 2 Mackerel Fillets
- 1 Large Baking Potato
- 2 tbsp Ketchup
- 1 tbsp Honey
- 1 tsp Soy Sauce
- 1 tsp Garlic Powder
- 1 tsp Cayenne Pepper
The spuds are going to take your time with this one. Cut the potato into wedges and then shake in a bag with a little oil and some seasoning. Bake in the oven for about 25 minutes, or until golden and crispy.
For the sauce mix together the ketchup, honey, soy, garlic and cayenne. Then leave to one side. For the fish place in a cold pan with a little oil and then turn the pan to full heat. Ass the pan heats it will cook the fish perfectly.
Once the fish is nearly done, transfer to a baking sheet and brush on the sauce and bake for about 3 minutes.
