Halibut with Green Bean aand Pesto Orzo

Wild Halibut has to be one of the best fish in the sea, well I think so anyway…

  • 200g Halibut Steak
  • 75g Orzo
  • 1 tsp Pesto
  • 50g Green Beans
  • 20g Grated Cheddar
  • 300ml Chicken Stock

Start off by heating a large pan or wok, to that add the orzo and a drizzle of oil, make sure all of the pasta is coated. Add a small amount of the stock and cook until the pasta has absorbed it. repeat this until the pasta is soft.  While the pasta cooks chop each end off the beans and cut in half lengthways. In some boiling water zap them in the microwave for 1 minute.

Once the pasta is soft add the pesto, cheddar and beans. Stir well to make sure it’s all mixed in. leave the Orzo to one side. In small pan cook the halibut on either side for about 3-4 minutes. Once done, leave to rest, while it does, bring the orzo back up to temperature. Finally, plate the Orzo and beans and top with the fish.
