Sea Trout and Pesto Linguine

Does fish count as a Meat Free Monday? I’m never sure… anyway…

  • 200g Sea Trout
  • 4 clams
  • 75g Linguine
  • 2 tsp Pesto
  • 50g Samphire

Start off by cooking the pasta until just done in salted boiling water. While the pasta cooks, pat the fish dry and cook with a couple sprays of 1 cal spray in a pan from cold. Turn the heat to full and let the pan heat up with the fish inside, I’ve found it cooks slightly more evenly.

Zap the samphire in the microwave in a bowl of hot water for 1 minute. Leave to one side and in a small pan cook the clams until they open.  Finally drain the pasta, a stir in the pesto and samphire. Plate with the fish on top, flanked by the clams.
