Stuff ‘Meat Free Monday’ this is Marinade Monday! Tomato and Balsamic to be precise!
For the Marinade
- 2 tbsp Tomato Puree
- 1 tbsp Oil
- 1 tbsp Balsamic Vinegar
- 1 tsp Basil
- ½ tsp Garlic Powder
- ½ tsp Cayenne Pepper
For the rest
- 2 Chicken Thighs (De-boned)
- 150g Cherry Tomatoes
- 50g Shredded Lettuce
For the marinade mix everything together and then smother the chicken. Leave the meat to marinade for 30 minutes or over night and once ready to cook, roast in the oven for 20 minutes at 180c. For the tomato salad, shred the lettuce and slice the tomatoes. In a bowl season the tomatoes liberally with salt. Once the chicken is done serve with the tomatoes and dive in!
