I dug out my griddle pan the other day and got some swordfish… this was the result.
- 200g Swordfish Steak
- 100g Tomatoes
- 1-2 stalks of Coriander (with leaves)
- 3-4 Slices Jalapeno
- 1 Spring Onion
Heat your griddle pan until it is literally smoking hot. Season the fish well and cook on either side for 3-4 minutes depending on the thickness of the steak.
While the fish cooks, finely chop the tomatoes, coriander and spring onion. Mix them together and add the jalapenos. Once the fish is done serve with the pico de gallo.
