I’ve always wanted to make this dish and finally I managed to have all the ingredients in the right place at the right time. I’m pretty sure this isn’t the ‘official’ way to make Panzanella but it’s my take on it.
- 200g Beef Skirt Steak
- 1 Ciabatta Roll
- ½ ball Mozzarella
- 100g Cherry Tomatoes
- Handful of Rocket
- 1 tsp Balsamic Vinegar
In heavy bottom pan, fry the steak to your liking and leave it to rest somewhere warm. While the steak rests, chop the ciabatta into chunks and slice the tomatoes in half. Put the tomatoes in a large bowl with a pinch of salt.
Fry the chunks of bread in the same pan you used for the steak until crispy. Add the bread to the tomatoes, rip the mozzarella into chunks and add that too. Finally add the rocket and any juices from the rested beef and stir well.
Slice the beef and plate up the salad. Top with the beef and tuck in!
