Beef Stir Fry

Sometimes you need a quick bite to eat before heading back out the door this one is perfect for that, quick to prep and cook, you’ll be eating in ten minutes (ish).

  • 200g Beef Skirt Steak
  • ½ Red Pepper
  • ½ Beef Oxo Cube
  • Handful of Salad Leaves
  • 1 Egg
  • Knob of Butter

Thinly slice the beef and then fry in a hot pan with a little oil fry the beef for about 3 minutes. As the beef cooks, in a small frying pan poach the egg in some boiling water. Next, thinly slice the pepper and throw that into the pan with the beef too. Stir fry for another 2 minutes, crumble in the Oxo and add the butter, stir everything together and add the salad leaves. Plate up and top with the egg.
