Fried Chicken, everybody loves it and this one should fix your fried chicken craving.
- 1 Skin on Chicken Thigh
- 200g Plain Flour
- 2 tsp All Purpose Seasoning
- ½ Chicken Oxo Cube
- 1 Deli Roll
- 1 Leaf Savoy Cabbage
- ¼ Red Onion
- 2 tbsp Mayonnaise
- Oil for Frying
- 100ml Buttermilk
First off, marinade the chicken in the buttermilk for about at least an hour. Once that’s done, mix together the flour and all purpose seasoning. Take the chicken out of the buttermilk and dredge in the flour. Heat your oven to 200c.
In a wok heat a good glug of oil and heat and until smoking slightly. Fry the chicken on either side for around a minute and then transfer to the oven for 10 minutes.
While the chicken cooks, finely slice the cabbage and onion and mix with 1 tbsp of the mayo, spread the other table spoon on either side of the deli roll.
Once the chicken is done, put it in the roll and top with the coleslaw.
