Loaded Chicken Sub

When you can’t think of what to cook it’s time to raid the fridge and cupboards to see what you can cobble together… this is the result.

  • 2 Skin on Chicken thighs (de-boned)
  • 8/9 Jalapenos (from a jar)
  • 1 Tomato
  • 2 tsp Mayonnaise
  • 2 tsp Salsa
  • 30g Cheddar (grated)
  • 1 Petit Pain or ½ Baguette

Let’s be honest it’s a giant sandwich… Fry the chicken thighs skin side down for about 5 minutes, turn and finish it off. Leave the chicken to rest and slice the tomato and grate the cheese.

Layer the tomato and chicken then pile everything else on top. Stick the sandwich in the oven to melt the cheese then shove in your face. Simple really.
