Pork Chop and Chilli Corn

When you are in need of a quick and easy dinner nothing is better than a pork chop baked in the oven. You can just stick it in there and leave it, grab a shower, have a coffee whatever you need to do.  To go with the pork the simplest of accompaniments that only requires opening a tin and a bit of chopping.

  • 1 Pork Chop
  • ½ Sweet Corn
  • 1 Red Chilli
  • 70g Mangetout
  • 2 Spring Onions
  • 1 Rasher Bacon
  • 15g Butter

As I said the pork is easy, heat the oven to 220c, season the chop on both sides and bake for about 15 minutes. While the pork cooks; finely chop the chilli, spring onion and mangetout. Drain the sweet corn and cut the bacon into lardons.

When the chop is done, turn off the oven and let it rest. While it rests, fry the bacon then add the chilli, mangetout and spring onions and give it all a good stir, finally add the sweetcorn and stir fry for about a minute.  To finish chuck in any juice that the pork has let out while resting and melt the butter into the sweetcorn mix and stir to coat everything.
