Scotch Eggs

I love homemade Scotch Eggs, my mum used to make them for us when we were little. This is actually my first go at making them and they didn’t turn out too bad! I’ll be honest though, I’m bad at boiling eggs, I did 6 originally but two broke when I was peeling them… So…

  • 4 Eggs
  • 4 Sausages
  • 100g Breadcrumbs
  • 1 Egg (Beaten for breading)

Heat the oven to 200c.  Right for the eggs, put them in a pan of cold water so that it covers the eggs. Bring the water to the boil then leave them for 7 minutes. Drain, cool with cold water and peel immediately.  Once peeled leave to one side.

Take the skins off the sausages and then with your hands cover the boiled eggs. Dunk them in the beaten egg and then into the breadcrumbs.

At this point either heat up your deep fryer or heat a little oil in a pan. Fry the eggs for around 2 minutes then stick them in the oven for five.
