I’ve covered Fried Chicken on here before but this is a new one, for me at least. A little while back I was given a packet of Louisiana Cajun Fish Fry, I have to say I haven’t actually tried it with fish but it makes some cracking fried chicken and can be picked up online for $1.64. However, if you can’t get your hands on it and have a craving for some ‘spicy’ fried chicken I have a remedy for that too.
- 1 whole chicken
- 100g Cajun Fish Fry
- 100g Plain Flour
- 1 carton Buttermilk 284ml
- 1 tsp Garlic
- 1 tsp Paprika
- 1 tsp Salt
- 1 tsp Pepper
- 200ml Oil
Or
- 200g Plain Flour
- 1 tbsp Piri Piri Seasoning (Tesco)
And the other ingredients….
Start off by cutting the chicken into its joints, wings, legs, thighs, breast (into 4) and middle bit (rib cage??). Once the chicken is cut up, in a bowl mix together the buttermilk, paprika, garlic, salt and pepper. Add the chicken and marinade for at least half an hour.
In another bowl, mix the flour and Cajun Fish Fry/Piri Piri Seasoning and then coat the chicken. Heat the oil in a saucepan and fry each piece of chicken for about 2 minutes, transfer each to a baking tray then bake for 20 minutes at 200c.
Rest for 10 minutes and then dive in and enjoy some homemade fried chicken!
