When I was at school, one of the holy grails of the break and lunch queue was the turkey burger. We would literally run from class to get our grubby little hands on one of these calorific wonders. This is before Mr Oliver took all the ‘nice’ things off school menus in favour of green stuff. This Turkey Burger however has a little more style than the ones stuffed into blazer pockets in a bid to sneak them out of the dining hall.
- 200g Turkey Thigh Mince
- ½ tsp Garlic Powder
- Salt and Pepper
- Oil for frying
- Handful of Rocket
- 1 Brioche Bun
- 1 Rasher Bacon
- 50g Stilton Cheese
Heat your oven to 100c, then put the turkey mince in a bowl and add the garlic and seasoning. Mix well and then form into a patty. If you can leave it in the fridge for about an hour to firm up, once that’s done, heat a frying pan, grill pan or wok (whatever you fancy) and fry the patty on either side.
Take the patty out and leave it to rest in a warm place. In the same pan fry the bacon until crispy. Now put the patty on a baking sheet, top with the bacon and then the stilton. Pop it in the oven until the cheese has melted.
While the cheese melts, cut the brioche in half and put the rocket on one side. Take out the burger, put it on the rocket side and stick the lid on top.
