Now this was supposed to be a paella kind of thing but it turned into more of a parikary stewy thing. It’s got Cauliflower ‘rice’ in it though!
- 200g Seafood Mix (Mussels, Prawns, Squid)
- 1 Bacon Rasher
- 150g Cauliflower
- 1 Chicken Stock Pot
- 1 Red Bell Pepper
- 4 Spring Onions
- 200g Chopped Tomatoes
- 50ml Water
- 2 tsp Smoked Paprika
- 1 tsp Turmeric
- 1 tsp Garlic Powder
In a blender blitz the cauliflower until it resembles rice. Pulse it as you can go too far and it ends up looking like cous cous and you don’t want that for this dish. Next, chop the bacon into little lardons and lightly fry in a wok.
Chop up the pepper and onions and add this to the bacon. Chuck in the tomatoes, chicken stock pot, water, paprika, turmeric and garlic powder. Give it all a good stir and reduce the liquid by half. Once you’ve reduced the liquid, add the cauliflower and simmer for about a minute before adding the seafood and cooking for a further 2 minutes. Once it’s all done stick it in a bowl and enjoy!
