- 150g Cod fillet
- 1 Courgette
- 100g Chopped Tomatoes
- 100g Aubergine
- 2 Field Mushrooms
- 1 Red Onion
- 1 tsp Smoked Paprika
- 1 tsp Garlic powder
You’ll need a spiralizer or a peeler for this, I used my spiralizer. Start off by spiralizing the courgette into ribbons. Once done, leave them to one side. Chop the aubergine, mushrooms and onion finely, along with the tomatoes this will make your ragu.
Pan fry the fish skin side down so that you get a nicely crisped skin, and then turn over and finish, this should take about 5 minutes on a high heat and then leave to rest in a warm place. I stuck mine in the oven at 50c.
In a large pan, cook the veg together and then add the mushrooms and reduce by a third. Once it’s all reduced add the courgette, stir and cook until it has all been coated nicely, you want the courgette to still be crunchy. Finally, put it in a bowl and put the fish on top.
