Huevos Rancheros

It’s not the prettiest dish in the world but it’s definitely tasty! I’d never actually made Huevos Rancheros before so this is my go at the classic brunch dish.

  • 1 can Chopped Tomatoes
  • 3 Eggs
  • 1 Rasher Bacon
  • 4 Spring Onions
  • 1 Red Onion
  • 1 Large Red Bell Pepper
  • 20ml Ketchup
  • 1 tsp Smoked Paprika
  • 1 tsp Cayenne Pepper
  • 1 tsp Garlic Powder
  • Salt and Pepper

I did mine in a weird way but it seemed to work for me. Heat your oven to 200c then slice all of the veg thinly and cut the bacon into lardons. In a wok fry the bacon and then once starting to brown add the veg and cook until the onion goes translucent.

At this point add your tomatoes, paprika, garlic and cayenne. Give it all a good stir and reduce by about a third. Next, add the ketchup and stir well, transfer the mixture to an oven dish and create three little wells in the tomato sauce. Crack your eggs and bake for about 5 minutes, or until the eggs are cooked.
