Roast Beef is a classic British Institution we are famous for it the world over. This is my version of how to cook the perfect bit of roast beef for you, your friends and family. Time is key.
- 1 Rolled Rib Beef
- Salt and Pepper
Beef and Seasoning, that’s it nothing more nothing less. Before cooking, take the beef out of the fridge and let it come up to room temperature. Season all sides liberally and in a hot oven, 220c cook for about an hour.
After that, turn the oven down to its lowest setting and cook for a further 2 hours. Once the beef has cooked, take it out of the oven. Leaving it in its roasting tray, cover with a layer of foil, then a tea towel and then another layer of foil.
Leave the beef to rest for 3 hours, trust me it is worth it. I cooked mine in a stone roasting pan which remained warm for the entire 3 hours. Drain the Beef of all its juices and use these to make some fabulously beefy gravy. Finally carve the beef and enjoy your roast dinner.
