Sea Bass is perfect for a variety of accompaniments. For me it is my go to fish if I’m not sure what to cook for dinner but know I want some kind of seafood.
- 1 Sea Bass Fillet
- 4 Brussels Sprouts
- 75g Samphire
- 1 tbsp Caesar Salad Dressing
Cut the stalky bit off the bottom of the sprouts and then cut them in half. In a sauce pan boil until just cooked, adding the samphire about a minute before the sprouts are done. Take off the heat and leave to one side.
Pat the sea bass dry with some kitchen towel and season well. In a hot pan with a little oil, pan fry the fish skin side down until you can see colour creeping up the sides of the flesh. Turn the fish over and finish off.
While the sea bass finishes, drain the samphire and sprouts and coat in the Caesar dressing. Put the vegetables in the centre of the plate and lay the sea bass on top. Dinner is served.
