There is something about a pork chop, it has the answer when you can’t think of what to have for dinner.
- 1 Pork Chop
- 6 Brussels Sprouts
- ½ Medium Courgette
- 2 Rashers Back Bacon
- Seasoning
Heat the oven to 200c and on a baking sheet season the chop on both sides. Stick it in the oven for about 20 minutes turning over halfway through.
While that’s in the oven shred the sprouts and dice the courgette. Cut the bacon into lardons and once you have turned over the chop. In a wok fry the bacon in a little oil.
Add the courgette and courgette to the bacon and stir fry until just cooked. Season liberally with black pepper, and plate up. Lay the chop on top of the vegetables and serve.
