I’ve been playing around with eggs recently. I love them but rarely eat them because I would rather have the extra time in bed than make breakfast. I am fully aware that they aren’t just reserved for the breakfast table though. These ones are done in a muffin pan so make it dead easy for you to give everyone an egg while maintaining damage control for those hungover beasts in your house on New Years Day.
- Eggs as required
- Oil for greasing
- Muffin pan, 6 or 12
While you are cooking the rest of the ingredients to revive your nearest and dearest after a rather heavy evening on the sauce. Heat, your oven to 180c and grease each of the pans on your muffin pan.
Crack one egg into each of the pans and cook in the oven for about 3 minutes. Times may differ depending how you like your eggs. Once they’re done you get perfectly round eggs that are fab for putting in rolls along with bacon and sausages for hungry hungover souls.
