Portly Cooks | Beef Mince and Rice Stir Fry

Beef and Rice Stir Fry

I had some leftover minced beef to be using up. It’s as simple as that really. I can’t cook rice, I’ve followed all of the ‘how to’ things on the internet and still no success. I have however, found that I can cook the boil in the bag stuff like a pro.

  • 200g Minced Beef
  • 5 Chestnut Mushrooms
  • 1 Medium sized Carrot
  • ½ a White Onion
  • 1 Oxo Cube
  • ½ tsp 5 spice
  • 1 Boil in the Bag Rice

In some boiling water cook the rice, mine takes 15 minutes. While that’s bubbling away finely chop the carrot and onion. Then slice the mushrooms. Fry the mince in a wok with a little oil until just coloured. Be sure to drain any excess fat that comes out.  Add the veg and fry for about 5 minutes.

Once the rice is done add to the beef mixture and stir around, finally sprinkle over the 5 spice, chuck in a bowl, grab a spoon and dive in.
