Chorizo and Pesto Spirali

Back to reality after yesterday’s fancyness, time to cook something slightly more normal. I love Spirali Pasta it’s a great thing to have in the cupboard for when you’ve run out of ideas in the catering department of your life. This one is dead easy and satisfying to boot.

  • 100g Spirali
  • 2 tsp pesto
  • 50g Parmesan (Grated)
  • Thumb sized piece of Chorizo
  • 20g Chopped Kale

You can’t really go wrong with this one. Cut the Chorizo into little chunks and then in some slated boiling water cook the pasta. Add the kale towards the end to whilt it and warm it through. While the pasta cooks in a wok cook the chorizo on a low heat. Once the pasta and kale are done, drain and add to the chorizo. Add the pesto and grated parmesan and give everything a really good stir around. Finally, stick it in a bowl and grab a fork.
